paneer achari Recipe
this is a north indian recipe made using cottage cheese..

Ingredients
1/2 kg cubed paneer
100 ml oil
4 tsp fennel seeds
2 tsp black mustard seeds
1 tsp fenugreek seeds
1/2 tsp nigella seeds
2 tsp cumin seeds
4 ground onions
8 chopped green chillies
2 tsp turmeric
3 tsp ginger paste
200 ml whipped curd
3 tsp dry mango powder
2 tsp kashmiri mirch
2 tsp sugar
Directions
heat the oil and fry the fennel, fenugreek, nigella and cumin seeds.
After 15-20 seconds, add onions and green chillies.
Stir and fry until golden.
Add turmeric powder, garlic and ginger pastes.
Fry for a minute
Pour in the yoghurt, dry mango powder, chilli powder, sugar and salt
. Cook until oil separates.
Add paneer with about 150 ml water.
Allow it to heat through.
Season and serve.

I was just wondering if anyone had tried it with Ultra Pasteurized over just Pasteurized milk... I used to be able to get regular pasteurized milk at my market but even that company has gone to Ultra only - I would think the extra heat might kill whatever is needed to make it start up?

It is not even very nutritious to drink, and won't work for home cheese making.find farm fresh milk from now on, not only for cheese making, but for ur family's health benefit as well. I found it very interesting to learn that cheese can be made from sheep's milk. Silly me, I never knew that sheep's milk was something people would use at all, much less make cheese from.sheep's milk is very nutritious and since it contains less water than cow or goat milk, the cheese yield from using it is much higher.

Commercial paneer in the Indian markets (usually from Canada) just isn't good like home made-it has a weird to me rubbery texture.
Home made paneer and of course curd are far better!

Can you make paneer with ultra pasteurized milk? I can get it from the Indian market but I want to make it for myself. It's not so easy to get anything in my neck of the woods that hasn't been pasteurized to death...

Oh I am reading this recipe at 8 AM and I am now wanting to make it! I love Kashmiri Mirch and use it every day -I love chiles and this one has such a lovely taste not so hot like habanaros or that crazy ‘Naga Jolokia’ from Assam.
This recipe of yours is such a taste satisfying dish. If people cooked like this they would not over eat as their plates would be so happy and satisfied!
