 Salmon fillets4
 Extra-virgin olive oil - for brushing fish
 Salt1 To taste
 Ground black pepper1 To taste
 Dry white wine1/2 Cup (16 tbs)
 Balsamic vinegar1/2 Cup (16 tbs)
 Orange juice2 Tablespoon
 Lemon juice2 Teaspoon
 Brown sugar2 Tablespoon
 Coarse black pepper - 1/2 teaspoon
 Green beans1 pound, trimmed
 Orange and/or lemon rind slices

Directions

GETTING READY
1 Preheat a cast-iron pan or heavy-bottomed skillet over medium-high heat.
2 Usin a brush, coat the salmon fillets with oil.
3 Season with salt and pepper.

MAKING
4 In a pan, cook salmon until just done,for about 3 minutes on each side.
5 In another pan add wine, vinegar, citrus juices and brown sugar and bring to a boil over high heat.
6 Cook the glaze for 3 or 4 minutes, until thickened.
7 Remove from the heat.
8 Add in 1/2 teaspoon coarse black pepper.
9 In a skillet, add green beans, pieces of orange and/or lemon rind along with 1/2 inch of water.
10 Bring to a boil, cover, and cook for 3 or 4 minutes.
11 Throughly drain the beans and toss with a little bit of oil (optional)
12 Add salt and pepper for seasoning.

SERVING
13 Pour the glaze over salmon fillets and serve with citrus green beans.
