Pan Haggerty Recipe
Ingredients
| 900 g/2 lb old potatoes, peeled | ||
| Onions | 2 Large, peeled | |
| 3 tablespoons dripping or butter | ||
| 175 g/6 oz Cheddar cheese, grated | ||
Directions
Slice the potatoes and onions very thinly.
Melt the fat in a large, heavy frying pan and place the potatoes, onions and cheese in layers in the pan.
Begin and end with potatoes and season each layer with salt and pepper.
Cover tightly and continue cooking for 15-20 minutes over a medium heat until all the potatoes are tender.
Brush some of the juices over the top layer and place under a hot grill till bubbling.
