Pan Fried Whiting Recipe

4 whole whiting, 3/4 to 1 pound each
1/2 teaspoon salt
Freshly ground black pepper to taste
1/2 cup milk
1/2 cup white cornmeal
1/2 cup shortening
1/8 teaspoon rosemary or thyme (optional)

Directions
1. Sprinkle inside of the fish with salt and pepper. Dip in the milk, and then roll in the cornmeal.
2. Heat the shortening in a skillet and fry the fish in it until brown on one side. Sprinkle with the rosemary, turn carefully and cook until the fish flakes easily when tested with a fork.
