Salmon

1 cube butter

Directions

Place the slice of salmon with the skin side down.
Season with salt and pepper.
Flip it.
Scrape scales if any.
Score the skin side with a knife.
Season this side also with salt and pepper.
Heat olive oil in a pan. When the oil is hot place the salmon in the pan.
Do not check the fish again and again. Let it stick to the pan and become nice and brown.
After 15 minutes, check and cook more if required.
Then grill it in the oven.
Put a cube of butter in the pan. Let it melt and brown. Then drizzle the melted butter over the fish.
Add a little lemon juice.
Serve the fish over some vegetables.
Finally, add a little lemon zest over the pan fried salmon.

Note the cooking time is not 15 minutes as stated above but more like 4 minutes before putting under the broiler / grill.
