Ingredients
1/4 cup all-purpose flour
1 1/2 teaspoons salt
1 teaspoon paprika
1/4 teaspoon pepper
1 2 1/2- to 3-pound broiler- fryer chicken, cut up
2 tablespoons cooking oil or shortening
Directions
In a paper or plastic bag combine flour, salt, paprika, and pepper.
Add 2 or 3 chicken pieces and shake to coat pieces evenly.
Remove chicken pieces; repeat with remaining chicken pieces till all are coated.
In a 12-inch skillet heat oil or shortening.
Place meaty chicken pieces toward center and remaining pieces around the edge.
For tender Pan-Fried Chicken, brown over medium heat about 15 minutes, turning as necessary to brown evenly.
Reduce heat; cover tightly.
Cook for 30 minutes.
Uncover; cook till tender, 5 to 10 minutes.
