1 tablespoon active dry yeast
 
1/3 cup warm water (105°-115°F)
 
2 1/2-3 cups flour
 
1 teaspoon grated lemon peel
 
2/3 cup milk
 
4 tablespoons unsalted butter
 
1 tablespoon sugar
 
1/2 teaspoon salt
 
1 egg
 
Glaze
 
1 egg, beaten with 1 tablespoon water

Directions

1 Dissolve yeast in warm water. Set aside for 5 minutes. Combine 1 1/2 cups flour and lemon peel in mixing bowl.
2 Heat milk, butter, sugar, and salt to warm (105°-115°F). Add yeast mixture, milk mixture, and egg to dry ingredients. Mix thoroughly.
3 Add enough remaining flour to form a soft dough. Knead on lightly floured surface until smooth€”about 10 minutes.
4 Place in greased bowl, turning to coat top. Cover; let rise in warm place until double€”about 1 hour.
5 Punch down dough. Shape into a ball. Place on greased baking sheet. (This makes a large loaf€”you may want to make 2 smaller loaves.) Flatten slightly.
6 Cover; let rise in warm place until double€”about 35€”45 minutes. Cut a cross on top of loaf. Make glaze and brush on loaf.
7 Bake in a preheated 350°F oven 1 hour for large loaf, 30 minutes for smaller. Cool on wire rack.
