Pampered Beef Fillets Recipe
Ingredients
| 6 large fresh mushroom crowns | ||
| 6 beef fillets, cut 1 inch thick | ||
| Butter/Margarine | 2 Tablespoon | |
| 1/2 cup chopped fresh mushroom stems and pieces | ||
| Green onion | 1/4 Cup (16 tbs), chopped | |
| Cornstarch | 4 Teaspoon | |
| 1 cup burgundy | ||
| Water | 1/2 Cup (16 tbs) | |
| Snipped parsley | 2 Tablespoon | |
| Salt | 1 Teaspoon | |
Directions
For fluted effect on mushrooms, cut V-shaped pieces out of tops.
Set crowns aside; reserve mushroom pieces for Royal Mushroom Sauce.
Heat butter in heavy skillet till golden brown and bubbling.
Quickly brown steaks on both sides over high heat, about 1 minute per side.
Place fillets on squares of heavy foil on baking sheet.
Allow to cool slightly.
Prepare Royal Mushroom Sauce.
Spoon a generous 3 tablespoons sauce over each fillet; top each with a mushroom crown.
Bring corners of each foil square up over steak, twist gently, and seal.
Refrigerate packets.
Before baking fillets, open tops of packets slightly.
Bake in 500° oven for 14 to 15 minutes for rare, 16 to 18 minutes for medium.
