Palm Springs Date Pie Recipe
Ingredients
3 eggs
1/2 cup sugar
1 cup dark corn syrup
1/4 cup (4 tablespoons) melted butter
1/4 teaspoon salt
1 teaspoon vanilla
1 cup finely chopped, pitted dates
9-inch unbaked pastry shell
1/2 pint (1 cup) whipping cream
Directions
In the large bowl of your electric mixer, beat the eggs until light; add the sugar gradually, beating thoroughly.
Beat in the corn syrup, butter, salt, and vanilla.
Fold in dates.
Turn into the pastry-lined pan and bake in a moderately hot oven (375°) for about 35 minutes, or until the filling is set and lightly browned.
Remove from oven and serve with unsweetened whipped cream
