 1 cup quick cooking rice
 Chicken broth2 Cup (16 tbs)
 Onion1 Tablespoon, chopped
 1/4 cup Italian-style dressing
 Soy sauce1 Teaspoon
 1/2 cup grated raw carrot
 5 or 6 fresh mushrooms, sliced
 1/3 cup diced pimento or black olives
 Toasted almonds1/2 Cup (16 tbs)
 1 cup diced ham, cooked chicken or shrimp

Directions

Cook rice in chicken broth according to directions.
While still hot, stir in all remaining ingredients.
Heat thoroughly without cooking.
Season with salt and black pepper.
Pass sour cream with chopped chives.
