Mom'S Paella Recipe

The main ingredients while preparing a paella are saffron,rice & olive oil but there is no one single way to prepare Paella.You can make a meaty paella by adding shrimps,squid,clams or any other seafood that you like or even chicken or you can also avoid adding meat to it & prepare a vegetarian Paella. I am making mine with lots of seafood meat in it. Enjoy!!

Ingredients

 
1 chicken, cut up
 
1/2 c. olive oil
 
6 chopped cloves garlic
 
1 tsp. paprika
 
1 lg.chopped onion
 
1/2 c. chopped fresh parsley
 
1 jar chopped roasted red peppers
 
1/2 tsp. saffron
 
1 qt. chicken stock
 
2 c. rice
 
1 lb. med. fresh shrimp (shell on)
 
1 lb. cleaned squid cut in rings
 
16-18 mussels
 
1 c. frozen peas
 
Lemon wedges

Directions

You start with heating the chicken broth & saffron & keep it aside for later use.In a paella pan heat olive oil & saute chicken till it is brown & cooked,add salt & paprika to it,add few onion slices to avoid spattering,now add 1/2 of the garlic.When garlic turns light brown,remove chicken & add shrimps to it.Cook it until orange,take out shrimps & keep it aside.Now add remaining onion,parsley,garlic & red pepper.Saute until soft.Now add rice,stir to glaze with oil. Add broth, little at a time, bring to boil after each addition. Salt to taste. Arrange chicken on top. Add scrubbed mussels. Arrange shrimp and squid on top. Scatter peas last on top. Cover loosely with foil. Continue cooking until all liquid is absorbed, rice is fluffy and mussels have opened. The juice of the lemons is sprinkled on the rice at the table.

Love paella and yes so many ways to make it. Each region and even each village seems to have a special way. In Catalan they use a type of snail (caracol) for paella, and in the Pyrenees they often use game such as rabbit. I love all paellas. Shanti/Mary-Anne
