Paella Salad Recipe

Ingredients
2 cups chicken broth
2 cloves garlic, minced or crushed through a press
2 teaspoons turmeric
1/2 teaspoon black pepper
1 cup raw rice
3/4 pound medium shrimp
1/4 pound ham, unsliced
1 large green bell pepper
1 medium red bell pepper
1 medium red onion
1/4 cup chopped parsley (optional)
3 tablespoons olive or other vegetable oil
2 tablespoons lemon juice
1 1/4 teaspoons grated lemon zest (optional)
Directions
1 In a large skillet, bring the chicken broth, garlic, turmeric and black pepper to a boil over medium-high heat. Add the rice, reduce the heat to medium-low, cover and simmer for 15 minutes.
2 Meanwhile, shell and devein the shrimp. Cut the shrimp into smaller pieces, if desired. Cut the ham into 1/2 inch cubes. Cut the green bell pepper into thin strips. Coarsely chop the red bell pepper. Cut the onion crosswise into thin rings.
3 Add the shrimp to the rice and cook for 5 minutes, or until the shrimp is cooked through and the rice is tender.
4 Remove the rice from the heat and stir in the ham, green bell pepper, red bell pepper, onion, parsley (if using), oil, lemon juice and lemon zest (if using).
