- x4 Chicken Breasts
 
- x1 Onion
 
- Bacon (125g)
 
- Chorizo Sausage (150g)
 
- Garlic (x3 cloves)
 
- Oil (to fry)
 
- 10-15 Pre-cooked King Prawns
 
- 10-15 Pre-prepared mussels
 
- Saffron (1/4 tsp)
 
- x1 Green Pepper
 
- x1 Tin Chopped Tomatoes
 
- Arborio Rice (300g)

Directions

Heat some oil in a pan then chop the Chicken and bacon and add to the pan - cooking for 5 minutes (until chicken is white through). Then put the chicken and bacon aside into another pan.

Chop the onion and garlic and cook in the pan for 5 minutes. Then, add the tinned tomatoes, chopped pepper and rice to the pan and stir gently for 3 minutes.

Add the saffron to 1 pint of boiling water, stir, then add to the pan, along with some salt and pepper. Add the chicken and bacon back to the pan and stir the contents thoroughly. Leave the pan to simmer gently until the rice is tender.

When the paella is nearly ready to serve, chop the chorizo sausage and add to the pan with the pre-prepared prawns and mussels. Simmer for 7 minutes then the Paella is ready to serve.
