Paella Recipe

Ingredients
2 cups cooked chicken
1/4 cup olive oil
2 cloves garlic, chopped
1 large yellow onion, finely chopped
2 cups long-grain white rice
4 cups chicken stock
2 teaspoons saffron
1/2 pound hard Spanish sausage, sliced
1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoons paprika
1/8 teaspoon Cayenne pepper
2 dozen clams, in shell
1 pound shrimp, shelled and deveined
2 red peppers
1 green pepper
12 asparagus spears
20 black olives
Directions
1. Preheat oven to 350°F.
2. Cut chicken into 1 1/2 inch pieces.
3. Pour olive oil into a large casserole or paella pan and heat. Add garlic and onion.
4. Add rice, chicken stock, and saffron. Bring to a boil, lower heat, and simmer covered for 25 minutes.
5. Add sausage, chicken, salt, pepper, paprika, and Cayenne pepper. Cover and bake for 15 minutes.
6. Add clams and shrimp and bake an additional 10 minutes.
