Ingredients

 4 fish fillets (1 lb/500 g total)
 Ground ginger1 Tablespoon, minced
 Soy sauce1 Tablespoon
 Garlic1 Clove (5gm), minced
 Carrots3/4 Cup (16 tbs), thinly sliced
 Snow peas3/4 Cup (16 tbs)
 Green onion2 Tablespoon, chopped

Directions

Cut four 12-inch (30 cm) squares of parchment paper or foil; fold each into triangle, then open into square again.
Arrange each fillet, tucking ends under, on one side of each fold.
Combine ginger root, soy sauce and garlic; drizzle over fish.
Sprinkle each with carrots, snow peas and onion.
Fold into triangle again; fold edges over to seal tightly.
On baking sheet, bake packages in 450°F (230°C) oven for 10 to 12 minutes or until fish flakes easily when tested with fork and vegetables are tender-crisp.
