Pacific Island Meatballs Recipe

Ingredients
1 1/2 lbs (675 g) ground beef
1 finely chopped garlic clove
2 tbsp (30 ml) oil
2 tbsp (30 ml) cornstarch
1/2 Cup (125 ml) brown sugar
1 rtsp (5 ml) salt
1 tbsp (15 ml) soy sauce
1/3 Cup (80 ml) white vinegar
1 Cup (250 ml) beef stock
1 1/3 Cups (330 ml) boiling water
1 1/3 Cups (330 ml) instant rice
1 Cup (250 ml) green bell pepper, sliced
Directions
– Shape ground beef into 24 small meatballs.
– In a skillet, heat oil, saute garlic and brown meatballs.
– In a bowl, mix together cornstarch, brown sugar, salt, soy sauce, vinegar and beef stock and heat mixture until thick, then keep warm.
– In a saucepan, pour boiling water over rice and green bell pepper, then cover and let mixture simmer for 10 minutes or until rice is tender.
– Arrange meatballs on a serving dish with rice.
