Pacific Chicken, Shrimp & Kiwi Fruit Kebabs Recipe

Ingredients
LIME-GINGER MARINADE:
6 tbs (90 ml) lime juice
3 tbs (45 ml) honey
2 tbs (30 ml) rice vinegar
2 tbs (30 ml) olive oil
1 1/2 tsp (8 ml) chopped cilantro
1 tsp (5 ml) grated fresh ginger root
1/4 tsp (1 ml) red hot pepper flakes
1/2 lb (230 g) chicken breasts, boneless and skinless, cut into 16 1-inch pieces
1 large red bell pepper, cored and cut into 16 pieces
1 small red onion, cut into 16 pieces
6 whole New Zealand kiwi fruits, peeled and quartered
16 peeled frozen shrimp
Directions
Lime-Ginger Marinade: Whisk together ingredients until well combined.
Toss chicken, peppers and onions with Lime-Ginger Marinade; marinate 1-2 hours in refrigerator.
When ready to cook, toss kiwi fruit and shrimp with other ingredients to coat with Marinade.
Divide ingredients among 8 skewers.
Grill or broil, 3-4 minutes per side, turning skewers once, until chicken and shrimp are cooked through.
Toss chicken, peppers and onions with Lime-Ginger Marinade; marinate 1-2 hours in refrigerator.
When ready to cook, toss kiwi fruit and shrimp with other ingredients to coat with Marinade.
Divide ingredients among 8 skewers.
