Oysters with Pink Butter Recipe
Ingredients
| 10 to 12 oysters in the shell | ||
| Shallots | 1 Tablespoon, minced | |
| Unsalted butter | 1 Tablespoon | |
| Red wine vinegar | 1 Tablespoon | |
| Red wine | 5 Tablespoon | |
| 1 stick of cold unsalted butter cut into 10 pieces | ||
| Chives | 1 Bunch (100gm) | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
1. Place oysters on a hot grill or in an oven until they just begin to open. Open completely with a knife and remove the top shell.
2. While oysters are opening saute the shallots in 1 tablespoon butter for about 30 seconds. Add the vinegar and wine and reduce the liquid to a third. Remove from the fire and whisk cold butter into the remaining liquid one piece at a time until all is incorporated and mixture is creamy.
3. Add salt, pepper, and chives cut into 1/4-inch pieces and spoon over warm oysters.
