Oysters Ham Richmond Recipe
Ingredients
2 cups cooked, diced ham
1 1/2 cups fresh tomatoes, peeled, diced
1/4 cup chopped green onion
1/4 cup chopped green pepper
1 cup cooked green lima beans, drained
1 cup whole kernel corn, drained
1/4 teaspoon salt
12 large raw oysters, drained
3 tablespoons butter
Salt and freshly ground pepper to taste
4 corn muffins, split and toasted
Directions
Combine ham with tomatoes, onion, green pepper, lima beans, corn and salt in a bowl.
Mix lightly.
Drain oysters and arrange on plate.
