Ingredients

 
1 can (8 oz.) oysters, undrained
 
1 package (10 oz.) frozen chopped spinach, thawed
 
3 tablespoons chopped onion
 
2 cups half-and-half (half milk, half cream)
 
1 teaspoon Worcestershire
 
About 2 tablespoons lemon juice
 
Salt
 
1/4 cup heavy cream
 
1/4 cup Hollandaise sauce (canned or freshly made)

Directions

Whirl oysters, spinach, and onion in a blender until smooth or force through a fine wire strainer.
Combine in a pan with the half-and-half, Worcestershire, lemon juice to taste, and salt to season.
Heat soup to simmering and cook gently for about 5 minutes.
Pour into heat-proof soup bowls.
Softly whip the cream and fold in Hollandaise sauce.
Spoon equal portions onto each bowl of soup.
Broil about 6 inches below heat until topping browns€” 1 or 2 minutes. (If you would like whole oysters in the soup, drain another can€”8 oz.€”oysters and add the shellfish to the soup before adding the topping.)
