Ingredients

 Butter1/4 Pound
 Sharp cheddar cheese1 1/2 Cup (16 tbs), grated
 Sherry2 Teaspoon
 Egg1 , separated
 2 x 4 oz (110 g) cans smoked oysters, drained
 32 x 1 1/2 inch (4 cm) bread rounds
 Parsley1 Tablespoon, finely chopped
 Paprika, to taste

Directions

Beat butter, cheese and sherry together.
Add egg yolk and blend well.
Whisk egg white till soft peaks form.
Fold egg white into cheese mixture.
Place 1 oyster on each round of bread.
Top with 1 tsp (5 ml) of cheese mixture.
Sprinkle with chopped parsley and paprika.
Place on baking sheets.
Bake at 450°F (230°C) for 10 minutes and serve piping hot.
