Oyster Cheese Puffs Recipe
Ingredients
| Butter | 1/4 Pound | |
| Sharp cheddar cheese | 1 1/2 Cup (16 tbs), grated | |
| Sherry | 2 Teaspoon | |
| Egg | 1 , separated | |
| 2 x 4 oz (110 g) cans smoked oysters, drained | ||
| 32 x 1 1/2 inch (4 cm) bread rounds | ||
| Parsley | 1 Tablespoon, finely chopped | |
| Paprika, to taste | ||
Directions
Beat butter, cheese and sherry together.
Add egg yolk and blend well.
Whisk egg white till soft peaks form.
Fold egg white into cheese mixture.
Place 1 oyster on each round of bread.
Top with 1 tsp (5 ml) of cheese mixture.
Sprinkle with chopped parsley and paprika.
Place on baking sheets.
Bake at 450°F (230°C) for 10 minutes and serve piping hot.
