Oxtail Stew Fermiere Recipe

Ingredients
1 oxtail, cut in small pieces
1 small yellow turnip, peeled and cut in four
4 medium-sized onions, whole and peeled
2 medium-sized carrots, whole and peeled
1 tsp (5 ml) thyme
1/2 tsp (2 ml) dry mustard
1 tsp (5 ml) coarse or fine salt
1/2 tsp (2 ml) black peppercorns
2 cups (500 ml) hot water or tomato juice
3 tbsp (50 ml) flour
1/2 cup (125 ml) cold water
Directions
Place all the ingredients, except the flour and cold water, in a 6-cup (1.5 l) ceramic, glass or plastic dish with a good lid.
Cover and microwave 2 minutes at HIGH.
Stir well, then microwave 40 to 60 minutes at MEDIUM, stirring 3 times and checking the meat for doneness.
When the meat is tender, stop cooking.
Mix together the flour and cold water.
Remove meat from bones.
Cut the carrots in 3 pieces.
Add the flour mixture.
Stir well, cover and microwave at HIGH 2 to 3 minutes, or until the sauce is creamy; stir once during cooking.
Place the meat in the sauce and heat 1 minute, if necessary.
Cover and microwave 2 minutes at HIGH.
