Ingredients

 Oxtail - 1 no, large OR 2 nos, medium, small pieces
 Flour1 Ounce
 Salt1 To taste
 Pepper To Taste
 Fat1 Ounce
 Water1 Pint
 Beef Stock Cube - 1 no
 Mixed Herbs - 1 bunch OR Dried Herbs - a pinch
 Celery sticks1
 Onion1 , chopped
 Carrots1 , chopped
 Turnip1 , chopped
 Peas2 Ounce
 Parsley - for garnish, chopped

Directions

MAKING
1) Season the flour with salt and pepper. Mix well.
2) Dredge the pieces of oxtail in a plateful of flour to coat well.
3) In a pan, melt fat. Add in the oxtail pieces and fry till they turn a plae golden brown on both sides.
4) Drain the fat off the pan.
5) Into the same pan, add in the water and beef stock cube. Let the mixture come to a boil. Stir till the mixture has thickened slightly.
6) Add in the mixed herbs tied up in a muslin cloth. Alternatively, you can add a pinch of dried herbs.
7) Add in the chopped onion, carrots and turnips.
8) Stir once, cover and cook the mixture on simmer for a little more than 3 hours.
9) When the last few minutes of cooking are left, add in the peas.

SERVING
10) Serve the Oxtail garnished with chopped parsley. Serve rye bread or steamed rice on the side.
