Oxtail Cooked with Grapes Recipe
Ingredients
| 50 g / 2 oz / 1/2 stick butter | ||
| 100 g / 4 oz / 1/4 lb bacon, diced | ||
| Onions | 2 Large, chopped | |
| Garlic | 2 Clove (5gm), chopped | |
| Carrots | 6 , diced | |
| 2 oxtails cut into short lengths | ||
| Bay leaves | 3 | |
| Sprig of fresh thyme | ||
| Chopped parsley | 1 Cup (16 tbs) | |
| Salt | To Taste | |
| black pepper | 1 | |
| 1 kg / 2 lb white grapes, seeded and de-stalked | ||
Directions
Melt butter in a large casserole.
Add bacon, and fry gently.
Add onions, garlic, and carrots.
Cook over a low heat for 15 min.
Add oxtail and herbs.
Season, cover, and cook over a low heat for 20 min.
Lightly crush grapes in a bowl, and add to casserole.
Transfer to a very low oven, 140°C/Gas Mark 1/275°F, for 3-4 hr. (until meat almost falls off the bones).
Skim fat from surface of sauce, and serve immediately from casserole.
