Add to bowl with next 4 ingredients, and mix well.
Wash heart, dry, hollow out a cavity for stuffing and sprinkle with salt and pepper.
Stuff heart, fasten with skewers and tie firmly in place with string.
Roll heart in seasoned flour, and brown in 1 tablespoon hot fat, turning to color all surfaces.
Place heart in oven pan or casserole that can be tightly covered.
Rinse out searing pan with hot water, and pour over heart.
Cover and cook in oven at 300°F. until tender 3-4 hours.
