 Vegetable oil1 Tablespoon
 Chuck2 Pound
 1 CUP SPICY TOMATO CHILI BARBECUE SAUCE or purchased barbecue sauce
 1 large onion, peeled and thinly sliced 8 ounces sunchokes, scrubbed and thinly sliced
 6 ounces white mushrooms, trimmed, wiped, and sliced
 Ground black pepper To Taste

Directions

Preheat your oven to 250°F.in a heavy oven proof skillet or casserole, heat the vegetable oil until hot but not smoking.
Add the meat and brown it on the first side, about minutes.
Turn it and brown the second side.
Spread the barbecue sauce over the meat, add the sliced onion, sunchokes, and a liberal amount of pepper.
Cover with foil or a tight fitting lid and place in the preheated oven for about 2 1/2 hours.
Uncover, add the mushrooms, and allow the sauce to thicken for another 20 minutes, basting the meat occasionally.
