Tasty Oven-Roasted Spinach and Cheddar Tomatoes Recipe Video

Here is a delicious way to use some of your fresh summer tomatoes - roast them in an oven, stuffed with spinach and topped with cheddar cheese.

Ingredients

 
Tomatoes ( not very ripe)
 
Frozen Spinach
 
Parmigiano red chiano
 
Cheddar cheese
 
Extra virgin olive oil
 
Salt
 
Pepper

Directions

Cut the bottom of the tomatoes so that they sit well. Scoop out the seeds and excess of flesh.

Season the cavities of the tomatoes with salt and pepper.

Use frozen spinach, squeeze out excess of water. Take them in a bowl and add some Parmigiano red chiano and some black pepper. Mix it well.

Pack the tomatoes with spinach cheese mixture.

Top the tomatoes with grated cheddar cheese.

Drizzle extra virgin olive oil over the tomatoes.

Cook in oven at 375 degrees for about 25 to 30 minutes until they are start turning brown.
