| Russet potatoes | 4 Large, unpeeled | |
| Vegetable oil | 3 Tablespoon | |
| Salt | 1/2 Teaspoon | |
Directions
1. Preheat the oven to 375°F. Coat 2 baking sheets with the cooking spray. Scrub the potatoes well; cut lengthwise into sticks, 1 inch thick.
2. Place in a bowl of ice water for 15 minutes to rinse out the starch (do not leave them longer in the water, for they will become water-logged). Drain well, then dry thoroughly with paper towels.
3. Using a pastry brush, lightly brush all sides of the potato sticks with the oil. Arrange them in a single layer on the baking sheets.
4. Bake, turning 2 or 3 times, for 1 hour or until crisp and golden brown. Sprinkle immediately with the salt and toss. Serve hot.
