Oven Fried Eggplant Recipe
Ingredients
| Seasoned bread crumbs | 1/2 Cup (16 tbs) | |
| Salt | 1 Teaspoon | |
| Eggplant | 1 Small, pared | |
| 1 egg, slightly beaten | ||
Directions
Heat oven to 375°.
Grease jelly roll pan, 15 1/2X 10 1/2X1 inch.
Mix crumbs and salt.
Cut eggplant into 1/2 inch slices; cut large slices into halves.
Dip eggplant slices in egg, then coat with crumbs; arrange in pan.
Bake uncovered 15 minutes; turn and bake 15 minutes longer. (Can be served immediately.)
Cool thoroughly.
Wrap, label and freeze.
15 minutes before serving, heat oven to 450°.
Remove Oven fried Eggplant from freezer and unwrap; arrange on ungreased jelly roll pan, 15 1/2 X 10 1/2 X 1 inch.
Heat until hot, about 8 minutes.
