Oven Fried Chicken With Basil Salt Recipe

1/2 cup all-purpose flour
2 teaspoons paprika
1/4 teaspoon pepper

2 cups dried bread crumbs
2 eggs
1/2 cup milk
2 2 1/2 pound broiler-fryers, cut up
1/2 cup butter or margarine
1 tablespoon basil
Directions
1. On sheet of waxed paper, mix flour, paprika, pepper, and 1 teaspoon salt. On another sheet of waxed paper, place bread crumbs. In pie plate, beat eggs and milk. Coat chicken pieces with flour mixture; dip into egg mixture, then coat with bread crumbs.
2. Preheat oven to 425°F. In large roasting pan (about 17 1/4 by 11 1/2") in oven, melt butter or margarine. Remove pan from oven. Arrange chicken pieces, skin side down, in single layer in melted butter in roasting pan; bake 25 minutes. Turn chicken pieces over; bake 20 minutes longer or until chicken is golden and fork-tender.
3. Meanwhile, with mortar and pestle, grind basil to fine powder (or crush basil by rubbing it between fingers). In small bowl, combine basil and 1/3 cup salt.
