Oven Baked Chicken Recipe
Ingredients
2 chickens or 8-10 pieces
1/4 cup soy flour
1/2 cup oat flour
3/4 teaspoon salt
1/8 teaspoon pepper
3 tablespoons oil for brushing chicken
1 tablespoon oat flour
1 tablespoon cornstarch
1/4 cup water
Directions
Preheat oven to 350°F.
Wash chicken, cut into serving pieces .
Let drain but do not dry.
Mix next 4 ingredients and put in paper bag.
Put 2 or 3 pieces of chicken in bag and shake to coat chicken.
Continue until all pieces are coated.
Place chicken, skin side up, in oiled pan.
Brush each piece lightly with oil.
Bake in preheated oven for one hour or until chicken is nicely browned and tender.
If desired, gravy can be made from the liquid in the pan.
Strain pan liquid into saucepan; dissolve 1 tablespoon oat flour and 1 tablespoon cornstarch in 1/4 cup water; add to pan liquid, stirring; bring to a boil and add more chicken stock or water to make desired consistency.
