Our-Kids-Love-It Eggplant Recipe
This cheesy broiled eggplant is a family favorite at my house and is especially savored by the kids. Coated with seasoned and herbed crumbs and cheese, these broiled eggplants are simple yet lovely to taste. try these with mashed potatoes or sweet potatoes bake.
Ingredients
Cooking oil
2 beaten eggs
2 teaspoons olive or cooking oil
1 medium eggplant, peeled and sliced 1/4 inch thick
11/3 cups cheese and herb-seasoned crumbs
Shredded mozzarella or Monterey Jack cheese (optional)
Directions
Brush unheated broiler pan with oil.
Beat together eggs and the 2 teaspoons oil.
Dip eggplant slices into egg mixture; coat with Cheese and herb sea soned Crumbs.
Place on greased pan.
Broil 4 inches from heat for 2 minutes or till golden.
Turn; broil 1 to 2 minutes more.
Top with cheese.
Broil 1 minute more or till cheese is melted
