Orzo Broccoli Pilaf Recipe
Ingredients
| Olive oil | 2 Teaspoon | |
| Mushrooms | 1 Cup (16 tbs), sliced | |
| Onion | 1/2 Cup (16 tbs), chopped | |
| Orzo pasta | 2/3 Cup (16 tbs), dried | |
| 1 14-ounce can reduced-sodium chicken broth | ||
| Shredded carrot | 1/2 Cup (16 tbs) | |
| Dried marjoram | 1 Teaspoon, crushed | |
| Black pepper | 1/8 Teaspoon | |
| 2 cups small broccoli florets | ||
Directions
In a large saucepan heat oil over medium-high heat.
Add mushrooms and onion; cook and stir until tender.
Add orzo; cook and stir about 2 minutes or until orzo is lightly browned.
Remove from heat.
Carefully stir broth, carrot, marjoram, and pepper into orzo mixture.
Return to heat.
Bring to boiling; reduce heat.
Simmer, covered, about 15 minutes or until orzo is tender but still firm.
Remove from heat.
Stir in broccoli.
Cover and let stand for 5 minutes.
Add mushrooms and onion; cook and stir until tender.
Add orzo; cook and stir about 2 minutes or until orzo is lightly browned.

Return to heat.
