Oriental Veal Chops Recipe

1 c. rice
1 tsp. salt
1 can onion soup
1 tsp. thyme
4 thick veal chops
Salt and pepper
2 tbsp. shortening
2 tbsp. lemon juice
1 can mandarin oranges
3/4 c. pitted cooked prunes
Directions
Combine rice, salt, soup and thyme in shallow baking dish; blend well.
Sprinkle chops with salt and pepper; brown in shortening in skillet.
Place on rice mixture.
Add 1/2 cup water to pan drippings; stir to blend thoroughly.
Pour over veal chops; sprinkle with lemon juice.
Bake, covered, in 350-degree oven for 30 minutes; remove from oven.
Drain oranges; reserve liquid.
Place prunes and oranges on chops; add reserved liquid.
Bake, covered, for 20 minutes longer.
