Ingredients

 
2 tins sweet corn
 
9 cups chicken stock
 
1 cup chicken meat, cooked and chopped
 
1 cup crab meat, cooked and chopped
 
4 spring onions, finely chopped
 
1/2 tsp. ginger, grated
 
3 tsps. salt
 
1/2 tsp. pepper
 
2 tbsps. red wine or sherry (optional)
 
3 tbsps. cornflour mixed with 1 cup stock
 
3 tbsps. parsley, finely chopped

Directions

Heat the stock in a large pan.
When hot add the corn, chicken, crab, ginger and onions.
Simmer gently over low heat for 10-15 minutes.
Add cornflour mixture and keep on stirring for sometime.
Add salt, pepper and sherry.
Serve hot garnished with parsley
