Oriental Shrimp Recipe

Ingredients
1 lb (500 g) shrimp, large or medium
3 tbsp (50 mL) chili sauce
1 tsp (5 mL) sugar
2 tsp (10 mL) cornstarch
1/2 tsp (2 mL) salt
1 tbsp (15 mL) vegetable oil
2 tbsp (30 mL) fresh ginger root, grated
1 garlic clove, crushed
1 small green pepper, slivered (optional)
1 tbsp (15 mL) each soy sauce and sherry
Directions
Remove the shell by cutting with scissors all along the stomach and pull.
Then, slit the stomach the length of the shrimp but without separating it in two.
Flatten it with your hands to shape it like a butterfly.
Mix together the chili sauce, sugar, cornstarch and salt.
Place in an 8-inch (20 cm) microwave-safe round bowl the oil, grated ginger and garlic.
Cover with waxed paper and heat 2 minutes at HIGH.
Remove garlic, add the green pepper and the chili sauce mixture, stir thoroughly, cover and micro wave 2 minutes at HIGH, stirring halfway through cooking.
Add the shrimp, mix well, cover and microwave 4 to 6 minutes at HIGH, stirring once halfway through cooking.
Add soy sauce and sherry.
Stir well and serve.
