Ingredients

 
1/2 lb. fresh bean sprouts
 
2 C (3/4 lb.) small shrimp (or 2 C chicken)
 
1/2 C thinly sliced celery
 
6 oz. water chestnuts, drained and sliced
 
1/3 C thinly sliced green onion
 
1 C. canned chow mein noodles
 
Salt and pepper to taste
 
Ginger mayonnaise (1/2 C sour cream, 1/2 C mayonnaise, 1 t lemon juice and 1 t. ginger)

Directions

Rinse sprouts, drain and pat dry.
In large bowl, combine sprouts, shrimp, celery, onion and chestnuts.
Cover and chill 2-3 hours.
In separate bowl, mix ginger mayonnaise.
To serve, mix mayonnaise mixture with shrimp mixture.
Sprinkle in chowmein noodles and toss lightly.
Serve immediately on lettuce.
