Ingredients

 1 1/2 cups uncooked long-grain white rice
 Water3 Cup (16 tbs)
 Light soy sauce2 Tablespoon
 Parsley1/4 Cup (16 tbs), chopped
 Rice vinegar2 Tablespoon
 Sugar1 Teaspoon
 1/2 pound asparagus, trimmed, cut into 1-inch pieces, and steamed
 3/4 cup sliced canned low-sodium plum tomatoes
 Red onion3/4 Cup (16 tbs), chopped
 1 green bell pepper, seeded and chopped

Directions

Place rice and water in a saucepan and bring to a boil.
Reduce heat, cover, and simmer for 20 minutes or until rice is tender.
Transfer to a colander and rinse.
Combine soy sauce, parsley, rice vinegar, and sugar.
Toss sauce with rice, steamed asparagus, tomatoes, red onions, and green pepper.
