Oriental Marinated Vegetables Recipe

Ingredients
2 cups fresh snow peas
1 (8-ounce) can sliced water chestnuts, drained
1 (8-ounce) can sliced bamboo shoots, drained
1/2 cup sliced fresh mushrooms
1/2 cup chopped green onion
1/4 cup rice wine vinegar
2 tablespoons reduced-sodium soy sauce
1 teaspoon finely grated fresh gingerroot
1 tablespoon vegetable oil
2 teaspoons sesame oil
1/8 teaspoon garlic powder
1/8 teaspoon crushed red pepper
Directions
Trim ends from snow peas.
Place snow peas in a steaming basket.
Plunge basket into boiling water, and remove immediately.
Drain well.
Combine snow peas, water chestnuts, bamboo shoots, mushrooms, and onion in a medium bowl; set aside.
Combine vinegar, soy sauce, and gingerroot in a small bowl.
Gradually add oil, bearing consrantly with a wire whisk.
Add garlic powder and red pepper.
Pour over vegetables; toss lightly.
Chill 2 hours.
Toss lightly before serving.
