Oriental Grilled Cornish Hens Recipe
Ingredients
4 (1-pound, 6-ounce) Cornish hens
2/3 cup unsweetened pineopple juice
1/3 cup dry sherry
1/4 cup reduced-sodium soy sauce
1 tablespoon sesame seeds
1 tablespoon honey
1 clove garlic, minced
1/8 teaspoon ground ginger or
1 teaspoon grated fresh gingerroot
Vegetable cooking spray
Directions
Remove giblets from hens; reserve for other uses.
Rinse hens with cold water, and pat dry.
Split each hen lengthwise, using an electric knife.
Place hens, cavity side up, in a large shallow dish.
Combine next 7 ingredients; pour over hens.
Cover and marinate in refrigerator 8 hours or overnight.
Remove hens from marinade, reserving marinade.
Coat grill with cooking spray.
Grill hens 6 to 7 inches over medium coals 1 hour to 1 hour and 15 minutes or until done, turning hens and basting with marinade every 15 minutes.
