Oriental Stir Fried Vegetables Recipe

Ingredients
2 tablespoons vegetable oil
4 to 5 cups coarsely chopped or sliced fresh vegetables (broccoli, carrots, cauliflower, onions, mushrooms, water chestnuts, Chinese cabbage, red or green bell peppers, snow peas and/or celery)
1 clove garlic, minced
1 3/4 cups (14.5 ounce can) CONTADINA® Stewed Tomatoes, drained, juice reserved
1 1/2 tablespoons soy sauce
1 tablespoon cornstarch
1/2 teaspoon ground ginger
1/2 teaspoon salt (optional)
2 cups hot cooked rice or oriental noodles (optional)
1/2 tablespoon toasted sesame seeds
Directions
In 12-inch skillet, heat oil.
Add vegetables and garlic; cook and stir over medium-high heat for 5 to 6 minutes or until crisp-tender.
In small bowl, combine reserved tomato juice, soy sauce, cornstarch, ginger and salt.
Add to skillet with tomatoes.
Cook, stirring constantly, for 2 minutes or until sauce is thickened.
Add vegetables and garlic; cook and stir over medium-high heat for 5 to 6 minutes or until crisp-tender.
