Oriental Spinach & Mushrooms Recipe
Ingredients
| Spinach | 1 pound | |
| Vegetable oil | 1 Tablespoon | |
| Ginger root | 1 Teaspoon, finely chopped | |
| Onion | 1 Small, chopped | |
| Garlic | 1 Clove (5gm), finely chopped | |
| Mushrooms | 1 Cup (16 tbs), sliced | |
| Water chestnuts | 1 Can (10oz), drained | |
| Soy sauce | 1 Tablespoon | |
| Sugar | 1 Teaspoon |
Directions
1. Prepare spinach for greens. Mix oil, gingerroot, onion and garlic in 3-quart casserole. Cover tightly and microwave on high 4 to 6 minutes, stirring after 2 minutes, until onion is soft.
2. Stir in spinach and remaining ingredients. Cover tightly and microwave 6 to 7 minutes, stirring after 3 minutes, until spinach is hot and crisp-tender.
