Oriental Mushroom Salad Recipe
Oriental mushroom salad is a spiced mushroom salad. Made with added red pepper and coriander for flavor, the salad is tossed with sesame seeds to serve.
Ingredients
| Honey | 2 Teaspoon | |
| Reduced sodium soy sauce | 2 Teaspoon | |
| Ground ginger | 1/4 Teaspoon | |
| Red wine vinegar | 2 Teaspoon | |
| 2 teaspoons Oriental sesame or peanut oil | ||
| 1 clove garlic, bruised | ||
| 1/2 pound mushrooms, sliced thin | ||
| 1 small sweet red pepper, cored, seeded, and chopped | ||
| 2 teaspoons minced fresh coriander or parsley | ||
| Sesame seeds | 1 Teaspoon, toasted | |
Directions
In a large bowl, whisk together the honey, soy sauce, ginger, vinegar, and sesame oil.
Add the garlic, mushrooms, and red pepper and toss well.
Cover and refrigerate for 2 hours.
Remove and discard the garlic clove.
Transfer the salad to a serving platter and sprinkle with the coriander.
Sprinkle with the sesame seeds, if you wish, and serve.
