4 ounces soft tofu (soybean curd)
1/4 cup water
1 tablespoon reduced-sodium soy sauce
1 clove garlic, crushed
2 teaspoons rice vinegar
1/2 teaspoon ginger juice
1/4 teaspoon sugar

1 small head romaine lettuce or 6 ounces spinach leaves, cut into 1 -inch-wide ribbons (6 cups)
2 medium-size carrots, peeled and shredded (1 1/2 cups)
4 radishes, thinly sliced (1/3 cup)
Directions
1 To prepare the dressing: In a food processor or blender, whirl the tofu, water, soy sauce, garlic, vinegar, ginger juice, and sugar for 1 minute or until smooth.
