Directions

Combine soy sauce, sugar, and garlic.
Place flank steak on a broiler pan; broil 8 minutes on each side or until desired degree of doneness, basting occasionally with soy sauce mixture.
Sprinkle with sesame seeds, and cut diagonally across the grain into thin slices.

Most certainly you can grill steak indoors on a cast iron stove top grill. If the flank steak is long, use the stove stop grill over two burners. But do not forget to turn on all the kitchen fans and open some windows, b/c it does get smoky, but it's a great way to get that quick searing heat with lines of caramelized char. The best part of grilling as opposed to broiling. Try and marinate the steak overnight in anything you'd use anyway...one thing that does help with the smoke is to rub off the chunky solid bits so that they won't char up while you're cooking the meat. Grill a 2# flank steak, for about 6-7 minutes per side (about 8 for well done), then let it rest, lightly covered with foil, for 15 minutes. It comes out perfectly medium-rare. Thinly slice on the bias, at an angle. You can also try the French method of sauteeing the steak in butter in a cast iron pan. Just keep it over medium heat so the butter doesn't burn and you'll produce a beautiful crust cooking it fairly slowly this way. With flank, since it's thin, you'll only be able to get medium/med rare with this method (you need a quicker sear than this to keep it rare inside).
