Ingredients

 
6 oz. long grained rice
 
1 tablespoon vinegar
 
Wine or tarragon for preference
 
1 tablespoon currants
 
1 large tomato, skinned
 
De seeded and chopped cut clove of garlic
 
3 tablespoons salad oil
 
Salt and pepper to taste
 
1 green pepper, finely sliced
 
2 tablespoons chopped walnuts
 
8 oz. cooked chicken cut into bite size pieces

Directions

Cook rice until just tender in plenty of fast boiling, well salted water, then drain very thoroughly.
Meanwhile rub a large bowl with a cut clove of garlic and in it mix together the oil, vinegar and seasoning.
Add the hot rice and mix thoroughly.
Stir in the remaining ingredients and lastly the chicken.
Cover and set aside in a cool place for the flavours to blend.
When cold transfer to a serving dish.
