Oriental Brown Rice Recipe

Ingredients
3 cups hot tap water
1 teaspoon salt
1 cup uncooked brown rice
1 package (6 ounces) frozen pea pods
1 package (10 ounces) frozen Chinese vegetables
1 tablespoon soy sauce
1/4 teaspoon ground ginger
Directions
1. Combine water and salt in a 2-quart glass casserole. Cover with an all-glass lid or plastic wrap. Heat in microwave oven to boiling (about 8 minutes at High).
2. Add rice to boiling water; stir. Cover and cook in microwave oven about 45 minutes at Medium, or until water is absorbed.
3. Remove from oven and let stand covered 10 minutes.
4. Meanwhile, put pea pods and Chinese vegetables into a 2-quart glass casserole. Heat uncovered in microwave oven 5 minutes at High; stir once.
5. Add vegetables, soy sauce and ginger to rice; stir. Heat uncovered in microwave oven 2 minutes at High. Stir.
