Organic Golden Rice Casserole Recipe

Organic Golden Rice Casserole can serve as a great main dish or side dish, especially with enchiladas. This Organic Golden Rice Casserole is one which is near and dear to my heart. Well worth your effort!

Ingredients

 
Juice of 1 lemon
 
2 cups (480 ml) Organic White Basmati Rice, cooked
 
1/2 tsp (3 ml) turmeric
 
2 cups (480 ml) steamed vegetables, any combination of peas, onions, broccoli, cauliflower, zucchini, carrots or mushrooms
 
8 oz (240 g) plain nonfat yogurt
 
1/2 cup (120 ml) toasted cashews, whole or in pieces
 
1/2 cup (120 ml) raisins

Directions

Preheat oven to 350°F (180°C).
Combine lemon juice, rice and turmeric.
Spread half of the rice in a buttered casserole dish.
Layer with half the vegetables then follow with half the yogurt, cashews and raisins.
Repeat and place in oven for about 30 minutes or until heated through.
