Oregon Salmon Recipe
Ingredients
| 6 salmon steaks, 3/4 inch thick | ||
| Lemon juice | 1 Tablespoon | |
| Black pepper salt | 1 To taste | |
| Egg whites | 2 | |
| 3/4 cup Mayonnaise or other mayonnaise | ||
| Shredded Cheddar cheese | 1/2 Cup (16 tbs) | |
| 1/4 cup chopped green onions | ||
| Parsley | 2 Tablespoon, finely chopped | |
| 1 tablespoon finely chopped dill or 1 teaspoon dill weed | ||
| Red cayenne pepper | 1 Pinch | |
Directions
Preheat broiler.
Generously grease a broiling pan.
Arrange salmon steaks on greased pan.
Sprinkle with lemon juice; season lightly with salt and black pepper.
Broil 4 to 6 inches from heat, 6 to 8 minutes or until fish tests done.
Meanwhile, in a medium bowl, beat egg whites until stiff but not dry.
Fold in mayonnaise, cheese, green onions, parsley, dill, pinch of salt and red pepper.
Spread mixture evenly over fish; broil until lightly browned
