Orange Yam Cups Recipe
Orange Yam Cups is one of my most popular preparations. I made them last year for an important dinner party and it was a complete success! Try this wonderful Orange Yam Cups recipe for yourself.
Ingredients
| 3 medium-sized navel oranges | ||
| Butter/Margarine | 2 Tablespoon, melted | |
| Orange juice | 3 Tablespoon | |
| Dark brown sugar | 1 Tablespoon | |
| Salt | 1/4 Teaspoon | |
| 1 3/4 cups mashed cooked yams | ||
| Pecans | 1/2 Cup (16 tbs), coarsely chopped | |
Directions
Cut oranges into halves.
Using a sharp paring knife, run it along the membranes of each orange section and remove pieces to a sieve set over a small bowl.
Empty collecting juice into the bowl.
Using scissors, snip membrane as close to peel as possible and discard.
Set the orange cups aside.
Combine butter, orange juice, brown sugar, salt, and mashed yams in a bowl; blend thoroughly.
Mix in orange pieces and pecans.
Pile into orange cups.
Set close together in a baking dish or pan.
Put into a 325°F oven and heat thoroughly, about 40 minutes.
